leftover jam simple cobbler

towards the end of the week i am always left with half bottles of this or that sauce, one or two of this veggie etc. i hate waste so i try to be creative and use what i have left so i don’t end up throwing things away and letting them expire. it’s so hard in the world of buying in bulk when there is just two of you to feed! i had a handful of left over berries from a picnic we had on sunday and they were starting to turn so into a cobbler they went.

i didn’t have any orange juice on hand which is what i like to add to give it a little tang but i DID have some left over bellini jam from the found cottage that i used to make those blue cheese and jam toasts. i added the jam to a small sauce pan and heated it up until it became liquid and mixed my berries right in before finishing the cobbler. it was so simple and delicious and really you can choose whatever fruit you want i just had blueberries and raspberries with me.

3 cups fresh fruit (i did about half blueberries and half raspberries)
3 tbsp sugar + 1/2 cup of sugar
1/3 cup of heated up jam (i used my left over bellini jam)
2/3 cup of flour
1/4 tsp of baking powder
dash of salt
1/2 cup softened butter
1 egg
1/2 tsp vanilla extract

heat up oven to 375 degrees.

in a 8 inch square dish mix the fruit, 3 tbsp sugar and jam together. set aside. in a separate bowl mix flour, baking powder and salt.

in a mixer cream butter and remaining 1/2 cup of sugar together until light and fluffy about 2 minutes. beat in the egg and vanilla. slowly add flour until everything is just mixed in. do not over beat!

pour the fruit filling into the pan and drop batter on top of the fruit trying to cover as much as possible. bake for about 30-40 minutes until top is golden and fruit is bubbling. serve with ice cream or whip cream (or yogurt for breakfast…because it’s fruit right?)
